Sunday Morning Pancakes

One of my favorite things to do on the weekend is cook breakfast. During the week we are rushing to get out of the house on time and don’t get to have breakfast together. Most days I eat yogurt or a protein bar at my desk for breakfast, so on the weekends, I try to make either eggs, french toast, or pancakes and sit down with Aaron to eat and enjoy our morning coffee.

Probably my favorite homemade breakfast is blueberry pancakes with bacon. I have all the ingredients to make pancakes all the time in the pantry, and its one of the few recipes I have memorized and can whip up in a few minutes. Sometimes I mix it up and cut up strawberries to add to the blueberries.

I mix up all the ingredients in a bowl while I’m heating my stove top skillet. I don’t have room to store an electric skillet, so my mom gifted a stove top one a few years ago for Christmas that I can store with my cookie sheets.

I also make turkey bacon, and I just bake it at 400 degrees while I am making the pancakes, then if it isn’t quite done I throw it on the skillet for a minute to crisp up.

I don’t mix the fruit into the batter because I like to make sure each pancake gets a fair amount of fruit. I use a 1/4 or 1/3 cup measuring cup to scoop out the batter, then I add the fruit to the top.

Once the bubbles have stopped forming I flip the pancakes and let them finish cooking.

Aaron and I love to sit down on the weekends, have coffee, and enjoy breakfast together. Pancakes seem like a little treat to celebrate the weekend. Plus it’s a fun weekend tradition that we can do in our pajamas.
