I have always loved to bake, probably because my Mom loves to bake. The only reason I don’t do it more often is that Aaron and I don’t usually eat all the treats. We will eat whatever I bake for a day or two, and then we are sick of it.
One dessert we finish every single time is chocolate chip cookies. Aaron and I both love them, and they are so easy to make.
I didn’t have enough regular chocolate chips for the batch I made the other day so I added in some white chocolate chips. I did about 3/4 cup semi-sweet chocolate chips, and 1/4 cup white chocolate chips. They were delicious. You could get creative and add in any kind of chip or nut, or dried fruit you want.
Here is what you need:
- 1/2 cup butter (I use unsalted)
- 1/2 cup sugar
- 1/4 cup brown sugar, packed
- 2 tsp vanilla
- 1 large egg
- 1 3/4 cup flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup chocolate chips (or whatever kind of chocolate pieces you want)
Preheat your oven to 350
- Melt the butter in the microwave for 40 seconds
- In a large bowl, mix butter with sugar and brown sugar until combined
- Stir in vanilla and egg
- Add in four, baking soda, and salt and mix until combined
- Stir in chocolate chips
- Place about a rounded tablespoon of dough two inches apart on a prepared cookie sheet
- Bake for 7-10 minutes
This recipe can be thrown together so quickly and makes about 12-15 cookies. This is the perfect amount for us. If I store them in an airtight container they last a few days and we can finish them before they go stale.
The other cookie Aaron loves is peanut butter. I bought this boxed mix on a whim at the grocery store the other day because I was too lazy to look up my recipe.
They were so easy to make and they turned out amazing. This is a great quick alternative for peanut butter cookies.
