I can’t even call this a recipe because it is so easy and I make it different every time. I found a version of this meal on Pinterest that was single tinfoil packet dinners with chicken and veggies. I decided to make it easier by roasting everything on a sheet pan in the oven.
All I do to make this is cut up fresh produce, usually things like red onion, zucchini, yellow squash, bell pepper, broccoli, sweet potato, anything I have.
The last time I made it I added the few baby carrots I had left in the fridge and a yellow pepper. You can use whatever veggies you want. Aaron doesn’t like Brussels sprouts, but those would be really good.
I cut up all the veggies and place them on a cookie sheet lined with aluminum foil or parchment paper, then top with a protein.
I usually use chicken breast and some kind of sausage for a little spice. Recently I have been using sweet Italian sausage because I have it in my freezer. Any meat will do though.
Once the meat is chopped up and placed on top of the veggies, I drizzle some olive oil over everything, then season with salt, pepper, and whatever spices I’m feeling that day. Garlic powder and Italian seasoning are my favorites.
Then I put it in the oven at 400 for 20-25 minutes, or until the meat is cooked all the way through.
We eat ours over brown rice, but I have also eaten it with gnocchi, or zucchini noodles and it was good that way too.
It is the easiest dinner ever. I actually made a batch on Sunday to have for lunch for the week to help us get out of our salad and sandwich rut.
