Roasted Smashed Redskin Potatoes

These potatoes are easily one of the best side dishes I make, and they are so easy.

All you need are mini redskin potatoes (I have also used baby Yukon), olive oil, seasonings of your choice, and parmesan cheese.

Before you begin, preheat your oven to 400. I used the convection setting on my oven to speed up the roasting time. You could also use an air fryer if you have one.

Place the mini redskin potatoes in a large pot. No need to cut them unless you have some that are much larger than the rest.

Cover the potatoes in water and turn the stove on high heat.

Once the water is boiling, let the potatoes cook until they are fork tender. I cooked this batch around 10-12 minutes.

Place the cooked potatoes on a parchment lined cookie sheet.

Using a fork, press down on each potato to smash it. You could also use a potato masher, but I prefer a fork so the potatoes stay together.

Once all the potatoes are mashed, mix a few tablespoons of olive oil with your desired seasonings. I used garlic powder and Italian seasoning this time. Everything but the bagel seasoning is also one of my favorites.

If you are in a pinch, you can skip this step and spray the potatoes with cooking spray, then add salt and pepper.

Brush each potato with the olive oil and seasoning mixture, then place baking sheet in the oven.

I roasted these for about 12 minutes on the convection setting. When I use my regular oven setting, I roast them closer to 20 minutes. Once the edges begin to crisp, I pull them out of the oven.

This step is optional, but who doesn’t love a little cheese? I sprinkle the potatoes with grated parmesan. I promise you, these turn out better if you use fresh parmesan that you grated yourself, or the kind in the deli section. Not the tub with the green lid.

Once you add your desired amount of cheese, pop them back in the oven for a few more minutes.

You don’t want to roast them too long this time, just long enough for the cheese to melt. I would guess 5-8 minutes.

Pull them out once they have reached your desired doneness, let them cool, and enjoy!

Last night I served them with BBQ burgers topped with crispy onions. This recipe makes a lot if you use the whole bag, but they are so good!
