Chicken Salad Recipe

When we lived in Michigan Aaron used to belong to a local private golf course. He played golf every chance he got, and always ate the chicken salad from the clubhouse. This was always weird to me because he doesn’t like mayo or sauces in general. He likes all his meat on the dry side. For some reason, he loved this chicken salad from the country club out of a cup. I don’t golf or love chicken salad, so I never tried it.

One day a few months ago he mentioned wanting chicken salad, so I searched for different recipes online. We tried a few before we got it right, and took the best parts from each one. He says this one is pretty close to the country club recipe! I make him a batch almost every Sunday and he eats it for lunch for a few days just out of a bowl. I bet it would be really good on a croissant though.

Ingredients:

  • 2 cups shredded chicken (I use rotissary)
  • 3/4 cup halved red grapes
  • 3/4 cup chopped celery
  • 2-3 green onions, sliced thin
  • 1/2 cup sliced almonds
  • 2 TBL fresh dill, chopped (this makes a huge difference)
  • 1/2 cup mayo
  • 2 TBL sour cream
  • Juice from half a lemon
  • Salt
  • Lots of pepper

Directions:

Add chicken, grapes, celery, green onions, almonds, and dill to a medium bowl.

Mix mayo, sour cream, lemon juice, salt, and pepper in a smaller bowl.

Add dressing to chicken mixture, cover, and refrigerate.

It’s a very simple recipe and if you buy rotisserie chicken it doesn’t take long to make at all. I also cut up a bunch of celery when I buy it and I buy pre-sliced almonds to make it easier to make. Aaron adds more pepper as he eats it, but that is a personal preference.
