Monthly Recap: November 2020

I looked at Aaron earlier this week and said, “do you realize it is December?”. What the heck happened to this year?

We started off November by searching all over the city for egg roll wrappers to make these pizza rolls from Half Baked Harvest. I have no clue why egg roll wrappers were so hard to find, but I had to go to three stores. I’m so glad I did though because these were delicious!

I brought exactly two Christmas decorations with me from Mi, and this year I decided I wanted more. I ordered this little 4-foot tree from Walmart for under $30. It arrived early November and I immediately put it up. I usually decorate after Thanksgiving, but I feel like we could all use some extra Christmas cheer this year.

We also replaced a large Ikea photo we had on this wall with a gallery of photos Aaron took. Some of them are from Michigan and some are from here, which I love.

I’ve been having outdoor lunch dates with a friend from work a couple of times each month. It is so nice to get out of the apartment and spend some time face to face (under masks) with a girlfriend.

My friend Elissa came to visit in mid-November and we had the best time! We went wine tasting, explored the city, ate all the delicious food, and drank all the wine. Buena Vista Winery was beautiful and the wine was amazing!

It was dusk by the time we got back from wine tasting and stopped to take photos of the bridge. This could the best bridge photo I have though!

We also stumbled on a Mexican restaurant that has changed my life. Look at those homemade tortillas and pico.

It has been chilly here the past few weeks, and the cats are even snuggling up under blankets. We have turned the heat on in our apartment for the first time ever. It needs to be warmer in here when we are working from home.

Our Thanksgiving was quiet and full of food, which was just the way we wanted it. I mad a full dinner and we just hung out and ate all day.

I made these Caramel Apple Cheesecake Bars for Thanksgiving dessert. Aaron picked this from the two I had saved, and he made a great choice. I will 100% be making these again.

The last weekend of November we walked to Union Square to see the Christmas tree, and I actually finished my shopping! This is the earliest I have ever been done shopping. I have historically been the person running out for “one last thing” on Christmas Eve.

We also went back to Regalito Rosticeria (the Mexican restaurant mentioned above) because Aaron didn’t get to try it the first time, and it’s that good.

The other dessert that I had saved that Aaron did not pick was this Chocolate Cream Pie. It has so much butter and so many egg yolks in it, but it was amazing. I have been eating a piece every single night since I made it (diet starts Monday, LOL).

Lastly, we attempted some Christmas card photos this year, and as you can see, they went great LOL. Shocker, the ones without the cats are way better. I’ll save the one we chose for the card for my December recap.
